1. Cocoa Cream Cheese and Fruit

This topping is not only pretty, but it’s tasty. Make your food pretty! It makes it even more enjoyable to eat:) I love the colors of this one and the chocolate flavor without adding in sugar. This is super simple to make and very quick to prepare. That’s important when you are hungry, am I right?

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon plain cream cheese
  • 1/4 teaspoon 100% unsweetened cocoa
  • 1 fresh strawberry, sliced
  • 8 fresh blueberries

Mix the cream cheese and the cocoa together. Spread the chocolate flavored cream cheese all across the rice cake. Arrange the strawberry slices and blueberries in a design of a flower as shown below in the picture.

**Sometimes I double this recipe if I want a thicker layer of cream cheese.

I generally use lightly salted rice cakes.

2. Almond Butter, Nuts, & Fruit

I love this topping because it’s so pretty, healthy, and rich. I often crave a glass of milk with this recipe with how rich the flavor is. It is scrumptious!

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon almond butter
  • 1 heaping Tablespoon fresh blueberries
  • 1 Tablespoon cashew pieces
  • 1 Tablespoon avocado, chopped

Spread the almond butter across the plain rice cake. Sprinkle the blueberries, cashew pieces, and chopped avocado pieces across the almond butter. Then enjoy!

3. Cream Cheese, Pepitas, and Green Grapes

This is a pretty one too and I love it. It is very tasty and light with a touch of nutty crunch from the pepitas. Do you know what pepitas are? They are pumpkin seeds. They are very yummy, healthy, and I’m totally addicted to munching on them.

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon plain cream cheese
  • 4-5 green grapes, sliced
  • 1 teaspoon pepitas

Spread the cream cheese across the rice cake in an even layer. Arrange the grape slices around the edge of the rice cake to be the flower petals. Add the pepitas in the center. This design reminds me of a flower like a daisy or a sunflower.

This gives a delicious nutty crunch to the rice cake which I love added into the crunch of the rice cake itself. It’s so simple and so good.

  • 1/2 to 1/4 of a banana sliced

I adore this recipe. It’s really simple and quick as long as you’ve got hard-boiled the eggs already on hand. This is great as a light meal for breakfast, lunch, or dinner. I find this to be a perfect one for me as a vegetarian because of the addition of the egg for a protein source. It’s really tasty and filling!

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon chopped avocado
  • 1/4 teaspoon chopped jalapeños (from a jar)
  • 1 Tablespoon cream cheese
  • 3 slices fresh tomato
  • 4 slices hard-boiled eggs
  • sprinkle egg slices with sea salt and black pepper to taste

Stir together the avocado (mashing it while you stir), jalapeños, cream cheese and spread it across the plain rice cake. Next layer the tomato slices and top with slices of hard-boiled egg. Sprinkle with sea salt and pepper as desired.

8. Berry Nutty

This one is loaded with berries and nuts. It’s super healthy and yummy! I adore it! It’s a little unusual to put peanut butter with berries, but I love the end result. This is again super easy and quick to prepare.

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon chunky peanut butter
  • 1 Tablespoon fresh blueberries
  • 1 teaspoon pepitas
  • 1 Tablespoon diced fresh strawberries

Spread the peanut butter across the rice cake and sprinkle the remaining ingredients across it: blueberries, pepitas, and strawberries. Doesn’t that look just gorgeous?

This one is super yummy too. This recipe reminds me of the classic summer salad with sour cream, cucumbers, dill, and onion…which is one of my favorite salads! This one is great too because it provides a good amount of protein with the yogurt and the sunflower seeds.

Ingredients:

  • 1/4 cup nonfat plain Greek yogurt
  • 1/4 cup cubed cucumber (leave the peel on for extra fiber)
  • 1/2 teaspoon fresh dill, chopped
  • 1 teaspoon sunflower seeds
  • 1/2 teaspoon finely diced onion

Combine all ingredients in a bowl and stir. Spread it across the plain rice cake and enjoy.

I love this recipe because I’m obsessed with peperoncini peppers…like I chow the whole jar rather quickly because they are so yummy. A current obsession of mine! This recipe is quick to make and with the cheese and seeds, it adds protein to the rice cake.

Ingredients:

  • 1 plain rice cake
  • 1 Tablespoon sunflower seeds
  • 1 Tablespoon shredded cheddar cheese
  • 1/2 teaspoon diced jalapeños from a jar
  • 2 teaspoons diced peperoncini peppers

Combine all ingredients and stir. Spread across the rice cake.
